Veggie Soup with Lentils, Barley & Beans! A Recipe Scaled For Two!

With Tropical Storm Debby still looming overhead, the dark skies had me looking for a hearty, satisfying soup.  This did the trick!
Having a “bank” of cooked lentils, beans and grains in the freezer - and some basic pantry items allows for quick and delicious meals to be made in minutes!
Don’t like barley?  Swap for brown rice.  Not a lentils fan?  Double the beans .. try different beans, different colors ... make it a soup you’ll love too!

What My Hubby Made Us For Dinner!

I’m very proud to announce this delicious dinner of Spicy Shrimp & Softly Fried Tortilla Triangles (and the corresponding step-by-step photos posted on Michelle's Kitchen Blog) were contributed solely by hubby Eric!  

I had a crazy couple of days over the weekend and he offered to make dinner for us.  Not only did he do an amazing job at making this meal (by himself) - but he took ALL (I mean ALL) the photos - completely unexpected as I wasn't planning to blog the recipe!
